Rice is Nice

Almond Turkey Delight

3 cups converted rice cooked
1/4 cup slivered almonds
1 cup turkey cooked
1/3 cup butter
1 can consomme
1/3 cup water
1 tsp. salt
1/4 cup flour

1. Brown almonds lightly in melted butter or margarine.

2. Remove from pan. Blend flour with remaining fat.

3. Slowly add consomme and water and cook over low heat, stirring constantly, until sauce is thickened.

4. Add salt. Place cooked rice in buttered individual casseroles or larger baking dish.

5. Top with turkey, or nest turkey in center of rice.

6. Sprinkle with toasted almonds and cover for approximately 20 minutes or until thoroughly heated and sauce bubbles.

Makes 4 servings.

Pork Chops & Rice Bake

1 cup converted rice
1/4 tsp. pepper
5 3/4" thick, center-cut pork chops
1/2 tsp. basil
1 can beef broth
1 Tbsp. cooking oil
2 Tbsp. steak sauce
1/2 cup chopped onion
1 Tbsp. salt
1 cup sliced carrots

1. Brown pork chops in oil.

2. In 2-quart baking dish (12"x 8"x 2") add rice, beef broth, one soup can of water, carrots, onions, steak sauce, salt, pepper and basil.

3. Arrange pork chops over rice mixture.

4. Cover and bake in 350 degree oven 45 minutes.

5. Uncover and continue baking 10 minutes more or until all water is absorbed.

Makes 5 servings.

Broccoli & Cheese Bowl

18 cups boil-in-bag rice cooked
6-3/4 cups cheese sauce warmed
4-1/2 cups diced onions
9 Tbsp. vegetable oil
9 cups broccoli florets blanched
6-3/4 cups chicken breast cut into 1" cubes

1. Cook rice according to package directions. Hold warm.

2. Saute chicken in oil until lightly browned on all sides. Add onion and cook until soft. Add broccoli and cheese sauce to pan and mix thoroughly.

3. For each serving, place 1 cup of rice in a bowl and top with 1 cup of broccoli mixture.

Makes 18 servings.

Baked Custard

1/2 cup brown rice
1 tsp. vanilla
dash nutmeg or cinnamon
1-3/4 cups water
1/8 tsp. salt
2 eggs beaten
1/3 cup sugar
2 cups milk

1. Stir rice and salt into boiling water in 3-quart saucepan. Cover tightly and cook over low heat until water is absorbed, about 28 to 30 minutes.

2. Add milk and cook gently, stirring occasionally, until mixture is creamy-about 5 minutes.

3. Combine eggs, sugar, salt and vanilla. Slowly stir rice mixture into egg mixture. Pour into greased 1-1/2-quart casserole.

4. Sprinkle with nutmeg or cinnamon if desired.

5. Place in pan containing 1 inch hot water. Bake in 350°F oven 45 to 50 minutes or until a knife inserted comes out clean.

6. Serve warm or chilled, plain or with cream.

Makes 4 servings.
